Les champignons sauvages

Mangez moi !

Entre les mois d'Août et de Novembre, la saison des champignons bat son plein. C'est l'occasion de se promener en forêt à la recherche de toutes les variétés de champignons sauvages pour réaliser des préparations culinaires en salade, en sauce, en accompagnement de viandes ou de poissons :

- Le cèpe de Bordeaux : excellent champignon au chapeau charnu, au pied en forme de massue. On le trouve en été et en automne.
- Le bolet tête de nègre : une espèce voisine, au chapeau brun foncé, est également très recherché.
- Le bolet rude: il possède des analogies avec le cèpe mais son pied est mince et fibreux.
- Le bolet à pied rude: ce champignon présente un chapeau olivâtre charnu, un pied charnu piqueté de rouge, et sa chair jaune verdit à l'air lorsqu'on la casse.
- Le pied de mouton: champignon jaune pâle qui porte sur sa face inférieure de petits aiguillons. Sa saveur est bonne. On le trouve en été et en automne.
- La girolle : aussi appelée « chanterelle », ce champignon de couleur jaune à orangé est l'un des plus recherchés des gourmets.
- La trompette de la mort : en forme de trompette, ce champignon foncé, très parfumé, peut à l'occasion se substituer à la ruffe.
